Vegan Thai Coconut Soup
🌱 As always, whole food, plant-based, uncomplicated & delicious because you can only be as great as the food you eat. 🌱
- 1 3/4 cups coconut milk (like a can, you knowwwww)
- 3 cups veggie broth
- 3 tbs yellow curry paste
- 2 tbs soy sauce (or gluten-free tamari to keep it extra clean)
- 3/4 cup chopped onion
- 1 cup sliced mushrooms
- 3 cups of broccoli
- 1-2 cups of cooked brown rice or quinoa
- 1 tsp powdered stevia
- 3 tbs fresh lime juice
- Cilantro for garnish
Heat the coconut milk, vegetable broth, curry and soy sauce in a big ol’ pot. Bring to a boil, reduce to simmer.
Add ‘shrooms, broccoli, onion, rice and cook slightly (3 minutes-ish). Remove from heat and stir in the rest of the ingredients, adjusting to taste.
Throw into bowls and toss some cilantro on top. Ta-da! Easy, clean and ever so tasty.
