Vegan Thai Coconut Soup


Ingredients:

  • 1 3/4 cups coconut milk (like a can, you knowwwww)
  • 3 cups veggie broth
  • 3 tbs yellow curry paste
  • 2 tbs soy sauce (or gluten-free tamari to keep it extra clean)
  • 3/4 cup chopped onion
  • 1 cup sliced mushrooms
  • 3 cups of broccoli
  • 1-2 cups of cooked brown rice or quinoa
  • 1 tsp powdered stevia
  • 3 tbs fresh lime juice
  • Cilantro for garnish

Instructions:

Heat the coconut milk, vegetable broth, curry and soy sauce in a big ol’ pot. Bring to a boil, reduce to simmer.

Add ‘shrooms, broccoli, onion, rice and cook slightly (3 minutes-ish). Remove from heat and stir in the rest of the ingredients, adjusting to taste.

Throw into bowls and toss some cilantro on top. Ta-da! Easy, clean and ever so tasty.
