Ingredients:
1/2 cup olive oil
1/4 cup sugar (if you’re eating super clean, you can omit or sub some stevia)
1/4 cup white wine vinegar
1 tsp chili powder
1 tsp salt
1 lb roma tomatoes, diced
1 can of black eyed peas, drained and rinse (feel free to sub lentils)
1 can of black beans, drained and rinsed
1 can of sweet corn, drained and rinsed
1 red onion, diced
1/2 cup diced green pepper
1/2 cup diced red pepper
1 cup chopped cilantro
In a large bowl, whisk together olive oil, sugar, white wine vinegar, chili powder and salt.
Add tomatoes, black-eyed peas, beans, corn, red onion and bell peppers. Stir.
Stir in cilantro. Cover and chill at least one hour to overnight to blend flavours. Serve with tortilla chips, cucumber slices or just eat it with a spoon!
